Smoking instructions for charcoal and smoker grills: Soak wood chunks or chips in water for 30 minutes. When charcoal briquettes turn gray, add chips and start cooking. For gas and electric grills: Soak wood chunks or chips in water for 30 minutes. Wrap pre-soaked chunks or chips in double layer of aluminum foil. Poke holes in top of foil packet, and turn holes away from the flame. When wood smokes through holes, start cooking. If wood catches fire, sprinkle with water to increase smoking time.
